Dreaming of Food
As of recently I've been having the funniest and strangest dreams about food.
On the menu this week:
Sunday- Philly cheese steak sandwich from Italian Place.
Monday- Prime Rib from who knows where.
Tuesday- A trip to Italy to eat home cooked spaghetti alla marinara.
Weird? Yes. Delicious? Yes.
I'm hoping tonight is french toast. I love me some french toast...and fried scones.
CHEERS!

I am not a terribly open person, however I feel inclined to share this one thing I read in my journal the other night. (side note: I usually read past entries when I don't feel up to writing. It happened to be one of those nights and I've thought about a lot the past couple days.)
I flipped to March 15, 2008 of my journal and I saw I had written "Life Goals". Oh boy, I thought, this should be good!
Here are (or were in some instances) my "Life Goals" at that point in time:
-start my genealogy; call my grandparents more often (I began emailing my grandpa last week)
-through all situations have an optimistic approach (this is an on going lesson)
-write a life history for my genealogy (I emailed my parents for ideas about my childhood)
-have fun and laugh as much as possible (I'm doing my best everyday in this)
-volunteer when opportunities permit
-have a family and be a fun mother (not just a mother, but a fun mother...ha!)
-travel to different places when I can (San Francisco 2010, San Diego 2010, Jackson Hole 2010, Disneyland & Hollywood 2009)
-graduate with my bachelor's degree and don't stop learning afterward (Graduated August 2009)
-run more races, short ones would be perfect: 10k, 5k, and half marathons (2 half marathons 2008 & 2010, Wasatch Back Relay 2008, and 4 5k's 2009-2010)
-do a small triathalon (Stake Triathalon June 2010)
-tryout sea kayaking
-go off a jump while snowboarding
-hike Mt. Timp (Hiked August 2009)
-become a better cook (cooking group w/roommates Winter, Spring & Summer 2009)
-create a recipe book
-never cut my hair off again! (still going strong. I do get trims, mind you)
-take yoga and Pilate classes
-go mountain biking down an awesome hill (biking in St. George May 2010, that was a big hill)
-see the Grand Canyon and raft down the Colorado River
-bike the Oregon Coast
-visit Nepal, Africa, and Thailand
-take a painting class
-have horses and ride them in the mountains
-have my own vegetable and flower garden
Phew! That is a list. And you know what is great? I have accomplished a lot of these (I will even show you how many cause I'm so proud of myself and I want you to see that a lot of them were achievable, even in a two year span)! It was such a confidence booster to read these. What is sort of funny is that I totally forgot I had written them, but that is besides the point. The point is that goals are life enhancing. They keep you focused, driven, happy, and confident. You can tell yourself that you did it. You achieved something that you worked really hard for. Some goals are little, big, take years, or a month or less to complete. Whatever it is, it is still an accomplishment. And I'm happy to say I did these, so I wanted to share with you all this. Maybe it will inspire you to make some goals (even a FUN list, don't forget we can have fun goals.) Write it out. What have you always wanted to do? What do you dream of doing? Where do you want to travel. I'm making a new list this weekend. My roommate Jessica is great at this type of thing. She makes 10 year plans (she pretty much almost completed all of her last one, amazing that girl). It never occurred to me back in '08' that I was making somewhat of a 10 year plan. So I am redoing my 10 year plan this weekend. I think you should join me!
All in all, it gives me a sense of something to look forward to.
