Fried Mango
i had half a mango left over in the fridge and decided to see what happens if you fry it. It was delicious. here's what i did:
1. i had to thin the leeks in my garden because they were growing too close, so i took out the skinny ones. they were about the thickness of my index finger. washed them and cut off the top green tough parts. left them in strands. if they were thicker, i suppose i'd cut them lengthwise into fourths.
2. cut up mango in bite sized chunks.
3. fried the leeks in olive oil on their own for a while. when they started to brown, i added the mango and fried longer (another 15 min?), until the mango began to caramelize a little. it got golden brownish on the edges. that's it. delicious.
the other part of the dish is much like the one in the previous post except with carrots instead of celery root -- potato, carrots, dandelion greens with olive oil and salt. The starchy texture and subtle taste went well with oniony leeks and sweet mango
