Strawberry Lime Slush

This is a great summer drink to make for any get together! So yummy!

1 can frozen limeade
2 cups sugar
8 cups water
2 10oz pkgs frozen strawberries

Combine limeade, sugar, and water together in a large bowl and stir until the sugar is dissolved. Put strawberries and 1-2 cups of limeade mixture into blender and blend until smooth. Add the blended strawberries to the limemade mixture and stir until combined and smooth. Put in the freezer. I froze it over night and then took it out to defrost for about 2-3 hours before the party. Then I just scooped it into the punch bowl with an ice cream scoop and served over Sprite.

Chicken Salad with Poppyseed Dressing

If you have any non-Mayo people in your home like I do, you may want to try this recipe out. I made this up for a friend's baby shower this weekend and it turned out really yummy. There are no amounts since I just threw in what I needed and tweaked it to the consistency I wanted.

Cooked chicken, shredded (I actually used grilled)
Red grapes, halved
Almonds, lightly toasted
Celery, minced
Poppyseed dressing

Mix all together and enoy!

Creamy Chicken Noodle Soup


This recipe is a great one to take to a friend that is sick or just had a baby. It's one of those great comfort foods that will be loved by everyone.

Creamy Chicken Noodle Soup

2 chicken breasts
1 stalk celery, minced
1 onion minced
water
2 potatoes, cubed
1 carrot, chopped
4-5 bouillon cubes
1-1 1/2 cups egg noodles
1 can cream of chicken soup

Place chicken, celery, and onion in a pot and fill pot until it the chicken is covered. Boil until the chicken is cooked through. Take chicken out and let it cool. While chicken is cooling add potato and carrot to the pot and cook about 5-7 minutes. Add bouillon cubes (start with 4, but if it needs more chicken flavor add the 5th one) and dissolve into the water. Once dissolved add egg noodles and cook for 4 minutes. Add can of cream of chicken soup and stir until smooth. Chop up chicken into bit size pieces and add into the soup and cook until chicken is warmed through. Add salt and pepper to taste.

Cake Balls and Oreo Truffles


I did these up for an activity last year as a little thank you gift. I think they're super cute! Here's the recipe for both kinds:


Cake Truffles
1 cake mix (and additional ingredients to make the cake)
1 can of frosting
Bake the cake as directed and let cool. In a largo bowl, break cake up into a fine crumbs. Add the can of frosting and mix up until combined and it holds together. Refrigerate (I put it in for about 1 hour, but it can be in there covered for up to 3 days). Roll into balls and place on a cookie sheet lined with parchment paper. Dip in chocolate. Decorate as you wish.


Oreo Truffles
1 bag oreos
1 pkg cream cheese softened
Put oreos in cuisinart and crunch to a fine crumb. Dump into a bowl. Put cream cheese in cuisinart and add 3/4 of oreos and pulse together until combined. Add more oreos as needed, but keep some aside for decoration. Roll into balls and place on a cookie sheet lined with parchment paper. Dip in chocolate.

For the cake truffles I made a white cake mix and put a little bit of red food coloring in it to make it pink. Then I dipped it in chocolate and sprinkled pink chocolate on the top. So now when you bit into the truffle it's pink inside. The oreo truffles are dipped in pink chocolate and have oreo bits on top. I tried one and they are super good. All the leftovers will have to go to my friends or else I will consume them all!

Freezer Jam Time!

Okay everyone, it's that time of year again!!! Start looking for those ripe strawberries, gather some friends, and make some freezer jam! My favorite recipe is straight from the Sure Jell pectin box.

Pretty simple ingredients:
Strawberries
Sugar
Pectin
Water
I love to put them in these little plastic containers since they're so cute to take to friends or tuck into a meal that you're sending out to someone.

I always get comments back when I send some jam with a meal that I make for someone. It always seems to be that little something extra that let's someone know you care. Go on out and make some and let us know how it went!

Shell Less Tacos


This is a recipe that has been a favorite of mine since I was a little kid! It is really kid friendly and really easy to make! Many times I make a double batch and freeze half so we can have it another night down the road.

There are all sorts of ways you can use this recipe. I find that most adults like to eat this like a taco salad and most kids like to dip their chips so you can jumble it up or put it in little piles. Whatever you your family enjoys!

Shell Less Tacos

1 pound ground beef
1 14.5 oz can diced tomotoes
2 8 oz cans tomato sauce
1 packet taco seasoning

Brown beef in a sauce pan, drain fat. Add tomatoes, tomato sauce, and taco seasoning to beef and simmer for 10 minutes. That's it, really!

-rice -beans -salsa
-chips -corn -salad dressing
-cheese -lettuce -whatever you like
