The weather is supposed to be great all week so I think we'll be whipping up a few dishes out on the grill! Stay tuned...

Roast
Ingredients:
1 Chuck Roast
1 pkg. dry Ranch Dressing
1 pkg. Brown Gravy
1 pkg. Italian Seasoning - I only used 1/2 pkg so it wouldn't be too salty
1/2 cup warm water
Directions:
-Drizzle 2 TBSP of oil in a pan, and over medium-high heat, sear each side of the roast
-Place roast in crockpot, and sprinkle the ranch, gravy, and italian seasoning over the roast
-Pour water in the bottom of crockpot, cover, and cook on low for 7-8 hours (the longer the better)
**I cooked my carrots with the roast, but took them out a few hours before the roast was done, so they wouldn't get mushy**

Kaitlyn's Weekly Menu
This week is going to be pretty easy for us, because we have family coming into town for a few days.
-Tacos
-Roast, carrots, mashed potatoes and gravy, and homemade rolls
-Chicken Cordon Bleu, rice, peas, and salad
-Parmesan Ranch Chicken, potatoes, corn, and salad
-B.L.T's, chips, and fruit

Kaitlyn's Weekly Menu
I am finishing up some Spring Cleaning this week, so dinner is going to be pretty easy.
-Chicken Cordon Blue, savory rice, potatoes, and salad
-Quesadillas and spanish rice
-Dinner Out
-Spaghetti and meatballs, salad, and garlic bread
-Sloppy Joes, chips, and carrots
-Chinese Chicken Salad
-Homemade Pizza

Mexican Casserole
Ingredients:
1 lb. ground beef
2 cups salsa
1 16oz can chili beans, drained
3 cups tortilla chips, crushed
2 cups sour cream
1/2 cup chopped green onion
1/2 cup chopped fresh tomato
1/4 cup chopped fresh cilantro
2 cups shredded Cheddar cheese
Directions:
-Preheat oven to 350*
-In a large skillet, brown beef, stir in salsa, reduce heat, and simmer until liquid is absorbed (about 10 minutes depending on how thick your salsa is)
-Stir in beans, and heat through
-Spray a 9 x 13 baking pan with cooking spray, spread crushed chips in a layer on bottom and then add ground beef mixture
-Spread sour cream on top, and sprinkle with onion, tomato, cilantro and cheese
-Bake for 30 minutes or until bubbly
**Next time I make this, we are going to add the sour cream on as a garnish after it cooks. The sour cream tastes fine if you cook it, but we prefer just a little on top**
Baked Potato Soup
Ingredients:
¼ cup butter
¼ cup onion, diced
¼ cup flour
14 oz can chicken broth
1 can evaporated milk
2 large or 3 medium potatoes -already baked
Salt and pepper to taste
Bacon (optional)
Grated cheese (optional)
Green onion (optional)
Directions:
-Melt butter in medium saucepan, add onion and saute until tender
-Stir in flour, and then add broth and milk
-Scoop pulp from one potato and mash; add to soup
-Bring to boil and then add the rest of the potatoes (cut into cubes)
-Top with crumbled bacon, cheese, and green onion
**Next time I make this, I am not going to use as much flour because it was a little thick. You can add as much or as little depending on how thin or thick you want your soup to be.**
