Rolo Cookies

This is another recipe from the "Favorites" cookbook. My mother in-law made these over Christmas and we all loved them.

Ingredients:
2 1/2 cups flour
3/4 cup unsweetened cocoa
1 tsp. baking soda
1 cup sugar
1 cup brown sugar
1 cup butter
2 eggs
2 tsp. vanilla
48 rolos
2 TBSP sugar

Directions:
-Combine flour, cocoa, and soda; set aside
-Beat sugars and butter until well blended; add eggs and vanilla
-Add dry mixture and blend well
-Shape cookies into small balls, and press a rolo into center of ball and cover with dough
-Roll cookie in sugar (we used powdered sugar)
-Bake at 350* for 8-10 minutes until tops of cookies are slightly cracked

Cake Mix Cookies

These are really easy, and you can use any kind of cake mix and any kind of add-ins you like. My favorite is Devils Food Cake with Carmel or Snickers pieces mixed in. Enjoy!


Ingredients:
1 package of cake mix (any flavor)
1 large egg
1/4 cup of oil
1/4 cup of water
1-2 cups add-ins (chocolate chips, carmel, toffee bits, raisins, coconut, M&M's, etc.)


Directions:
-Preheat oven to 350* degrees
-Combine cake mix, egg, oil, and water
-Beat until well blended, and stir in add-ins
-Drop by teaspoonfulls about 1 inch apart onto greased cooke sheet
-Bake for 12-15 minutes, or until done

Pizookie

When I was in high school, I worked at a Pizzeria and this dessert was on the menu. I don't know how I stayed so skinny because I seriously ate these all the time. I haven't had one is so long, but I have been craving this yummy dessert so I decided to try and make my own. I am very happy to say, they turned out awesome! Try it, I promise you will like it!

Ingredients:
cookie dough (I used chocolate chip, but you can use any kind you like)
vanilla ice cream
hot fudge

Directions:
-Preheat oven to 350*
-Place your cookie dough in a small oven safe baking dish
-Push the cookie dough down just a little bit so it is spread out
-Place in the oven and bake for 15 minutes or until golden brown and crispy on the outside edges and chewy in the middle
-Place a scoop of vanilla ice cream on top and drizzle with hot fudge
-Eat immediately because it's best when it's hot!

*Tips*
-The baking dishes I use are about 4 inches around, and this makes enough for one person. Trust me, you will not want to share anyway!

Triple Chocolate Chip Cookies

This recipe is from the Williams Sonoma website. These were so good!

Ingredients
1 1/4 cup all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup unsalted butter, at room temperature
1/2 cup firmly packed golden brown sugar
6 TBSP granulated sugar
1 lg egg
1 tsp. vanilla extract
1 cup semisweet chocolate chips
3/4 cup white chocolate chips
3/4 cup milk chocolate chips

Directions:
-preheat the oven 350
- in a bowl, sift together the flour, baking soda, and salt. set aside
- in a large bowl (or mixer) combine the butter, brown sugar, and granulated sugar. beat on medium speed until smooth.
- add the egg and vanilla and beat on low speed until well blended.
- slowly add the dry ingredients and beat on low speed until just incorporated.
- mix in the chocolate chips.Drop the dough by heaping tablespoons onto the prepared baking sheets, spacing the cookies 2 inches apart.
-Bake the cookies, 1 sheet at a time, until the bottoms and edges are lightly browned and the tops feel firm when lightly touched, 10-13 minutes.
-Let the cookies cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.
-Store in an airtight container at room temperature for up to 3 days.

Stop n Go cookies

Ingredients:
1 1/2 cups flour
1/2 cup unsweetended cocoa powder
1/4 teaspoon baking soda
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1 cup sugar
1 egg
1 1/2 teaspoons vanilla
red, yellow, and green M&Ms

Directions:
-Preheat oven to 350*
-Mix flour cocoa, baking powder, baking soda, and salt in a medium bowl.
-Beat butter with mixer for 30 seconds in a large bowl.
-Add sugar, beat until combined. Add egg and vanilla, beat until combined.
-Add flour mixture 1/2 cup at a time, working it in with your hands.
-Shape 1 tablespoon of dough at a time into rectangles.
-Press M&Ms onto dough
-Bake for 8-10 minutes
