


I snagged a way YUMMY chicken enchilada soup recipe off a friend-gotta love facebook- and everone I have shared it with LOVE it too! It's super easy-of course that's why I LOVE it- and super yummy-reminds me of the one at Chili's! My neighbor showed me how easy it is to cut up corn tortillas and fry them in oil to make your own "fresh" tortilla chips that go perfect with this soup--or you can buy some in the store too!so here is the recipe and make some up for this cold snow storm coming in this weekend!
Chicken Enchilada Soup
4 chicken breasts
boil in water
shred up
*you can then use the broth to
make my yummy Mexican rice that
is also way good to put in this
soup instead of the chips!
(((Mexican Rice-))))
2 cups white rice
6 cups chicken broth
brown rice in oil sprinkle in
garlic salt-add chicken broth
1/2 small can tomato sauce-or
use the whole can if you want
it to be more tomato-ish. stir
and simmer until done.
cook the shredded chicken in taco
seasoning mix-follow directions on
the mix.
in a big pot
4 cans cream of chicken soup
or 2 big cans...
1 big can of enchiliada sauce
1 cup milk or I like using a
pkg of sour cream instead.
2 cups of shredded cheese
but I like using the whole
2lb. bag of shredded cheese! YIKES!
then add the chicken
stir well until all melted
and soupy looking!!
