
Chicken katsu is my favorite version of fried chicken.
Heat oil to 350f/176c. I use peanut oil. Flatten chicken and season with salt and pepper. Beat eggs in a bowl. Coat chicken with flour and let rest for ten minutes. Dip chicken in egg then press into panko, aka japanese style bread crumbs. Fry until cooked and lightly season with salt.
I served this with shredded iceberg lettuce since I didn’t have cabbage. The lettuce is lightly salted.
Looks wonderful. What sauce do you eat it with? This one is usually a crowd pleaser.

There is a thin sauce I’ve seen used but I haven’t looked up what it us or how to make. I’ve been meaning to but I always forget.
