Project Wife

Here are a few yummy meals I made last week. I'm not a super advanced chef, but I do my best. All of these recipes were super easy and pretty self-explanatory but if you'd like to know how I did something I will be happy to pass on my limited knowledge :)

TERIYAKI CHICKEN
Teriyaki Chicken
just chicken glazed with teriyaki sauce, baked at 350 for about 40-ish minutes. I added the pineapple the last ten minutes and glazed those too.

ALFREDO + PESTO PASTA
Alfredo + Pesto
pretty simple...however I got a bit creative and mixed alfredo and pesto sauce together. It was delicious. Alfredo is pretty bland for me sometimes, the pesto did the trick.

Added the avocado and tomato after the pizza was done...added salt and pepper and voila, yummy!

HONEY BAKED CHICKEN
Honey Baked Chicken
This one I put a bit more effort into. It was a yummy honey marinade on the chicken. Very sweet :)

SEASONED PASTA + ASPARAGUS
Seasoned pasta + Asparagus
This meal takes like 10 minutes. Chuck the pasta in boiling water, when it's done seasoned with pepper, seasoning salt and shredded parmesan.

The common thread through all of these meals, the ASPARAGUS! It is delicious and I wanted to use it up before it went bad, luckily C didn't mind eating it every night. When we went out to eat one night he even asked the waitress if they had asparagus. Here's what you do...

ASPARAGUS

preheat oven to 375
wash and line up on a baking sheet
sprinkle/pour vegetable oil over the asparagus {don't drench}
season with the big sea salt, seasoning salt, pepper and parmesan

bake for 10 minutes or until tender. ENJOY!

It's official, I'm a wife!

I normally don't do much cooking. Ever since c and I wed, I have only cooked a few meals. I have never really had the time with school and work. I barely had time to ever sleep let alone cook! So this summer, one of my goals was to be a better wife and actually put some effort into cooking my man dinner! I've cooked a few things for him already since we've been out here, but last night I put some REAL effort into it...CILANTRO LIME CHICKEN with SWEET POTATO FRIES! yummy. I modified and combined a few recipes online, hoping it would work and actually taste good and then my friend Tia sent me a yummy recipe for the fries. It was a very tasty meal, if I do say so myself! I'm sure most of you girlies out there take this kind of time for meals all the time, but I never do, so that's why I'm rambling on about it so much. But enough talk....
before this is a little before action, I threw some yummy ingredients + the chicken and marinated for about 3 hours! wooh!

Here's the recipe if you folks want to try it out for yourself...

{CILANTRO LIME CHICKEN}

2 chicken breast
1 tsp of seasoning salt
1 tsp of ground black pepper
1/4 tsp of cayenne pepper (you can use more if you want it spicier, but be careful!)
1/4 cup of lime juice
1/4 cup of olive oil (i used vegetable oil)
2 cloves garlic minced
1/2 cup chipped fresh cilantro (I didn't really measure an amount I just chopped up however much I wanted, I LOVE cilantro!)

Preheat oven to 350
Defrost chicken (microwave for about 10 min is what I did)

Combine seasoning salt, black pepper, cayenne pepper and mix together in a bowl. Rub that seasoning all over that chicken. Get it nice and covered. Then put in a zip lock bag.

Mix lime juice, olive oil, garlic, and cilantro together then add to the zip lock bag.

Marinade those suckers. At least 2 hours, I did for about 3.

After it's done marinading, bake em! I baked them for about 30 minutes and I poured the marinade over the chicken and let them bake together...they'd already been together for 3 hours, why separate them now!

{SWEET POTATO FRIES}

2 sweet taters (i used yams...i think, i can't tell the difference)
1 tbs olive oil (i used vegetable oil)
1/2 tsp chili powder
1/2 tsp garlic powder
1/4 tsp salt

Preheat oven to 425

Wash your taters, leave skin on, then cut them up so they look like fries. Toss the taters in a bowl with the oil, chili powder, garlic powder and salt.

On a baking sheet spread fries in a single layer and roast, stirring every 10 minutes until brown and tender. (about 30/35 minutes)
