Ketchup has a high enough vinegar content that it’s fine outside of a fridge. It was always kept in the fridge in my house growing up, so I always assumed it would spoil if left out. It recently was pointed out to me that restaurants leave that shit out on the table all day and it’s fine. I’ll probably still keep it in the fridge as a habit and because it tastes better cold.
