May be a difference in terminology here but generally “cornflour” is a synonym for “cornstarch”. Like I am looking at the box in my pantry to make sure I didn’t imagine anything and it’s definitely cornstarch. Masa, here, would be closer to the product we call “cornmeal” (although I believe masa is made from nixtamalised corn/hominy but cornmeal isn’t? I dunno, never cooked with either). Yes, whole ground maize can be any colour, but cornstarch afaik is always extremely white.
Cornflour is white!:D like, whiter than wheat flour, if anything. It may not always be turmeric but I’m pretty sure that’s what it traditionally is.
The batter on their fish and chips (if you can even call it batter) IS FREAKING YELLOW SOMETIMES!

It’s just turmeric mate. It barely affects the flavour but if done right the batter has a nicer colour after cooking, that’s all. Not that the food here is good, you aren’t wrong at all… But complaining about Australians actually employing a spice where the kiwis don’t made me laugh. You can get good meals in Australia but a lot of it is overpriced garbage.
