Eggs Benedict in Mushrooms

This is one of my favorite things to eat right now!  It is super easy and super healthy and not to mention delicious!

All you need is some large mushrooms (whatever you can find is fine), 
some eggs and 
some light ham (optional)

Peel the mushrooms, remove the stalks and place in a baking tray.
Crack an egg inside the mushroom.

Sometimes with a teaspoon I scrape out the inside of the mushroom to give the egg more room to avoid it spilling over the edge.

Place some slices of ham on the top.

Bake in a moderate oven for 30min.  After 15 min the egg whites should be cooked while the yolk is still runny and after 30min the yolk should be firm.

While I was waiting I made a very simple salad of lettuce, carrot and beetroot.

And voila the finished meal!

Each one has 136 Calories, 8g Carbs, 6g Fat, 14g Protein and 2g Sugar.  
You can have one on its own for a snack,
or you could have two, add a salad and make it a meal!

Running

It took me a while to decide which workout to do today.  I normally try and do and outdoor run on Sunday afternoon it is a lovely way to end the week!  However I really felt like I should of been doing a strength workout (I even thought of doing both) but I decided to go with the run! Yay!  It was great, I ran 6.02km in 38.50 min which was about a min longer than my last 6km run however I had a couple of long waits at traffic lights so I guess it is fine.

I popped my iPhone music on shuffle forgetting that I have the complete collection of Roald Dahl audio books in there! Snip its of The BFG and Matilda are not really the best motivation.  I don't really need the music though.  I mostly don't use music, I really enjoy just being alone with my thoughts without little people constantly talking at me :)

I had a slight mishap with some homemade choc chip pancakes this morning and then an incident with a doughnut!!!  Grrrr! Actually my calories have been shocking over the weekend!  So this week I am going to focus on nutrition, I will plan my workouts for the week tonight so I don't have to think about it too much during the week so hopefully I can focus on nutrition!

Light Core Workout

I managed to squeeze in a core workout this afternoon.  I didn't think it was going to happen there for a while but I did it!

It was only small, here it is:

Warm up
25 Star jumps
25 Ski jumps

10 Bicycle Crunches
10 Bent Knee Leg Lifts
30 sec Plank
10 Stability ball pull ins
10 Stability ball back extensions
Rest 30 seconds

Fitness and Weight Loss

I have really struggled to loose my baby weight this time round.  The first three times were hard but I kept focus through the journey and made progress.  This time I do well for a week or so then drop everything for a few weeks.  It is not normally how I roll!  So I think I will use my blog as an online diary and share with you my journey,  including my successes and failures, trials and triumphs - everything!

Yesterday I decided it was time to get back to business.  I managed to do a few workouts over the Easter break but I did way more indulging than exercise, this resulted in gaining a few kilos - eeek!

So I kick started yesterday with a killer workout I wrote myself. I started the day feeling awful, Bimi has been waking up at 3am and not getting back to sleep, all week and it was starting to catch up with me.  My sister looked after my little guys for a few hours and I was so tempted to just go home and sleep but I made myself go to the gym, when I got there I thought I would be lucky if I got any work done at all.  I started my workout and BAM I was in the middle of the BEST workout!  I sort of made it up as I went - This is where I really appreciate the study I have been doing! I should be writing my own programs by now however I love the security of a program that has been written by a professional! From now on though I think I will be doing more of my own plans.

Here it is:
5 min treadmill warmup

(The model is : complete superset 1, rest for 30 seconds then repeat 2 more times, then once through the Ab set and rest 30 seconds, move on the superset 2 and so on finishing with 3 sets of dumbbell swings with 30 second rest in between sets. And finally 20 min intervals)

It was a big workout and I am feeling it today! But I left the gym feeling great!  I am really hoping that I can keep the momentum going!

Today I am planning on doing a light core workout. I will let you know how it goes.  Also I have some recipes I am going to share with you all soon.
