WELCOME to our blog! Our family began in August of 2000 when Jody and I were married and has grown into a family of 6! We have 3 beautiful daughters and 1 handsome son! This blog was created in January of 2006 for our family and friends and to serve as a scrapbook for our kiddos in the years to come! A spring/summer favorite

I'm not sure when Chick-Fil-A came out with their parfaits, but the Yogurt Parfait with Oreos & Strawberries is super yummy!  Our family loves them, but they are around $2 each, so we don't get to get them very often!  There are only 3 ingredients, vanilla yogurt, strawberries and Oreos and I thought why haven't I made these before?


For my version, I use my Pampered Chef 1 cup glass bowls, one large container of yogurt, a couple sliced strawberries, a couple crushed Oreos and start layering!  



These are a definite hit for The Livingston Family!  What are some of your favorite spring/summer treats?

Tasty Tuesday

Taffy Apple Pizza
(One of my absolute favorites :)

Ingredients
*1 package (18 oz) refrigerated sugar cookie dough
*1 block cream cheese (8oz), softened
*1/2 cup packed brown sugar
*1/4 cup creamy peanut butter
*1/2 tsp vanilla
*2 medium Granny Smith apples
*1/4 cup caramel ice cream topping
*1/2 cup peanuts, chopped

1. Preheat over to 350. Shape cookie dough into a 14 inch circle about 1/4 in thick, bake 16-18 minutes or until light golden brown. Remove from oven, cool completely.

2. Combine cream cheese, brown sugar, peanut butter and vanilla, mix well. Spread cream cheese mixture evenly over cookie.

3. Peel, core and thinly slice apples, arrange evenly over cream cheese mixture.

4. Microwave ice cream topping on high 30-45 seconds or until warm; drizzle evenly over apples. Chop peanuts, sprinkle over apples. Cut into wedges.

Yield: 16 servings

Tasty Tuesday

Pronto Pasta & Sausage Skillet





Ingredients

*1 medium onion

*1 medium green bell pepper

*3 links hot italian sausage (12 oz)

*2 garlic cloves, pressed

*1/4 tsp crushed red pepper flakes

*3 1/2 cups uncooked penne pasta

*3 1/2 cups water

*1 jar (26oz) spaghetti/marinara sauce

*1/4 tsp salt

*1/4 tsp coarsely ground black pepper

*2 oz cream cheese, softened

*1 cup shredded mozzarella cheese

*1 oz Parmesan cheese, grated (1/4 cup), divided

*1 tbsp chopped fresh parsley

Directions

1. Dice onion and bell pepper. Remove casings from sausage, cut in half lengthwise, then cut crosswise into 1/2-in. Nuggets. Place sausage into skillet, cook over medium heat 6-8 minutes or until golden brown.



2. Add onion and bell pepper to skillet; cook an additional 2-3 minutes or until vegetables are tender. Add pressed garlic and pepper flakes; cook 10-20 seconds or until fragrant. Stir in pasta, water, sauce, salt and black pepper. Bring to a simmer; cover and cook 14-16 minutes or until pasta is tender, stirring occasionally.



3. Remove skillet from heat. Stir in cream cheese until incorporated. Top with mozzarella and Parmesan cheese. Cover and let stand 2-3 minutes or until cheeses are melted. Garnish with chopped parsley.



Yield: 6 servings

Tasty Tuesday

Loaded Baked Potato Chowder

This is a super tasty recipe that is easy to make and costs less than $2 per serving to make!!!

Ingredients:
*3 large baking potatoes (skins left on)
*3 1/2 cups milk
*4 oz cream cheese, softened
*2 tbsp butter
*2-3 green onions with tops
*4 oz sharp cheddar cheese
*1 1/2 tsp salt
*1/2 tsp coarsely ground black pepper

Bake/Microwave potatoes until potatoes are easily pierced with a fork. Coarsely mash potatoes. In a separate bowl, whisk cream cheese until smooth, slowly add milk, whisking until smooth. Add cream cheese mixture and butter to potatoes. Microwave (in microwave safe bowl) on High 3-5 minutes. Add cheese, green onion (sliced), salt and black pepper until cheese is melted. Serve with toppings, bacon, sour cream or broccoli florets, if desired!

Zesty Ravioli Skillet...

What I ate for lunch today....

And yes that is Spinach and I loved every bite (for those of you who don't know me all that well I'm not a big veggie eater)!!! It was so yummy I had to share the pictures with you :)

I've had several requests for this recipe, so here it is :) By the way this takes only 20 minutes to prepare, yield 8 servings :)

Ingredients
*1/3 cup heavy whipping cream
*4 cups loosley packed fresh spinach leaves
*6oz Provolone cheese (grated)
*1 tbsp olive oil
*1 small jalapeno pepper (seeded)
*3 garlic cloves (pressed)
*2 cans (14.5oz) diced tomatoes w/onions, undrained
*1/2 tsp coarsley ground black pepper
*1/2 tsp salt
*1 pkg (24oz) small frozen cheese ravioli

Add oil to 12 inch skillet, heat over medium-high heat 1-3 minutes. Finely chop jalapeno and add to skillet, cook and stir 1 minute or until crisp-tender. Press garlic into skillet, cook and stir 15-20 seconds or until fragrant.

Add tomatoes, salt, pepper to skillet, cook and stir 1-2 minutes or until simmering. Add ravioli, stir to coat. Cook, uncovered, 4-5 minutes or until tender. Stir cream into skillet. Cook, uncovered. 1-2 minutes or until simmering. Sprinkle spinach over ravioli; cook, covered, 1 minute or until spinach starts to wilt.

Remove skillet from heat. Top with cheese; cover skillet and let stand 1-2 minutes or until cheese is melted.

2 must-haves for back to school...

I'm all about saving time, especially in the mornings trying to get Emma's lunch made, the kiddos fed, changed and in the car for carpool!!! I use 2 items almost daily...one is the Cut-N-Seal and the other is the Apple Wedger...

Both of these make my life easier and save me time too :)

The Magic Pot


I know you're saying what's so magical about a pot? And this specific pot for that matter? Well, when The Pampered Chef created the Deep Covered Baker it was designed to be used in the oven to prepare lots of dishes, but someone realized it works phenomenally in the microwave as well! I know what you are thinking...But NO!!! I use my "magic pot" at least once a week for a variety of dishes (even desserts) to feed our family. It has worked so well lately for me because I don't have to turn on the oven to prepare my family a hot meal and it's been SWELRTERING here in NC!!!

Another great thing is most of the meals I have been preparing have been $2 per serving or less!!! Just today I cooked a whole chicken in just 30 minutes in the microwave for a total cost of $3.19 and it fed our family of 5 (Jack doesn't eat real food yet), I just added a salad with some homemade dressing and voila!!!

Last week I created a pasta chicken dinner in under 29 minutes in ONE pot in the microwave using garden fresh ingredients! Who wouldn't want to save time, energy and money?!

Not a believer?....come on over for dinner and we'll show you just how magical this pot really is!!!

Yummy for the Tummy

Strawberry Amaretto Pastries....they sound delicious right? I've made this recipe for a few friends and a lot of people have requested it, so I thought where better to post than our blog!!! This is a Pampered Chef recipe, so if you don't have the specific kitchen utensils mentioned it's ok to use whatever you have! A new job for Mommy...

So I had a Pampered Chef party this past Saturday, their products are awesome! I really wanted to do the show to earn free and discounted items as well as eat yummy food! Jody had been bugging me to be a consultant, he thought I would do a great job, (I am not so confident). My parents, Jody, my friend Melissa and I were talking about all the benefits of being a consultant so as of today, I am now a Pampered Chef consultant! I'm excited about this opportunity to help contribute to our family's income. I'm not nervous about promoting, planning or record keeping, however I am extremely nervous about the actual show part, demonstrating the products by cooking a meal, snack or dessert! Hopefully I'll receive my kit this weekend and then I'll be all set to start having shows! If you or someone you know would like to buy Pampered Chef products, please let me know. If you would like to do a show, please let me know too, I need the experience, even if you are not able to purchase items!
