**BAKING**

There really is nothing better than a chocolate dessert!
(Well at least for me)
And today is just that!
CHOCOLATE-GINGER PUDDING PIE!
This pie is delicious!!!! A must try!
The best part, this pie is so easy to make!
You must use the best ingredients!
Nothing better than Ghirardelli Chocolate!
Candied Ginger (Rough Chop)
Making the Pudding!
When finished it will be quite thick!
The Crust!!!
The Pie!!
Sliced and ready to plate!
Topped with whipped cream and ready to eat!!
Is your mouth watering yet???

Here's the recipe:

CRUST:
15 chocolate wafer cookies
15 gingersnaps
3/4 stick unsalted butter, melted
Generous pinch salt

PUDDING:
2 c. whole milk
3 egg yolks
1/2 tsp vanilla extract
1/2 c. sugar
1/4 c. cornstartch
5 ounces Bittersweet Chocolate
2 TLB Chopped Candied Ginger

CREAM:
1 c. heavy cream
2 TBL powered sugar

Preheat the oven to 350 degrees F.

Crust: Crush the cookies in a food processor with the

melted butter until almost finely crushed,

or in a plastic food storage bag, using arolling pin).

Pour the cookie crumbs into pie dish.

Using your hands, smooth out the crumbs to form an

even crust on bottom and sides of the pan.

Bake for 10 minutes. Remove from oven and set aside to cool completely.

Filling: In a medium heavy-bottomed saucepan,

whisk together the milk, yolks and vanilla

Stir in the sugar, cornstarch, chocolate and salt.

Bring to a boil over medium heat, whisking constantly.

Boil for 1 minute, then immediately remove from heat.

Mixture should be very thick!

Quickly stir in the ginger, then pour the pudding into the crust.

Cover the surface of pie with plastic wrap

(to prevent a skin from forming)

and chill for 3 hours, until set.

Before serving, whip the cream and

sugar together in a small bowl, until soft peaks form.

Serve each slice of pie with a dollop of whipped cream.

So Different!

I have a very creative child-- Jack! And he's 2!
He loves to paint, draw, color and build things with legos.
He'll even turn the legos upside down so that he can build
something in a different way.
It is a little strange.
He can be occupied for HOURS doing things like this.
Don't get me wrong, he loves to play outside,
be with his brothers and be 2--
but his true love is creating things!
I KNOW FOR A FACT--this love did not come from me.
I can not create anything--ok, ok I did create him-
so that's something---but being "creative" NOT a gene I possess!
Everything he builds has reason to it as well.
Each side has to be equal--
Here's a "Tall Tower"

Call me crazy--but is this a little weird??? For someone so young?
But really SOOOOOO cute!!!!


And then there's Kyle!!!
A whole different breed!
He is messy, disorderly, and oh so rough!
And then so sweet at the same time.
He'll look at me and out of no where say,
"Yov You mommy".
Talk about melting my heart!
This morning while Jack is building---
Kyle is making a mess!!!
At least he'll eat the mess!! : )
And also SOOOOO cute!

2 totally different boys!
2 totally different looks!
2 totally different personalities!

And they both hold a key to my heart!

**BAKING** (for halloween)

It's time for---
Halloween Sugar Cookies!

This is such a fun time to make FUN treats!
Make sure the dough is easily rollable.
Have the kids help push down the cookie cutters
Carefully place on cookie sheet.
(I mean carefully, because many of our ghosts only had 1 arm)
The END result!!!
Cute Pumpkins, Black Cats, and Ghosts!
I think the chocolate chips were my kids favorite part.


ENJOY!!
Here's the recipe:

1 pound butter (soft)
3 cups sugar
6 eggs
7 tsp. baking powder
2 tsp. vanilla
7-8 cups flour

Cream butter, sugar, eggs.
add baking powder and vanilla.
add flour one cup at a time.

Roll out, cookie cutter,
bake @ 350 for 8-10 minutes

Stitches Are Out!

Well Steven has survived!
He got his stitches out!!

Here his is with the heart monitor on his thumb.
He thought that was pretty cool!
Here's the Dr. working carefully to remove the 5 stitches.
Luke just had to come along for moral support!
More like it is so hard to separate these 2.
Here he is with his 5 little stitches on a stick!
That will go right in the Book of Remembrance!

Now Steven let's be careful not to get stitches
for at least longer than 3 months this time!

Getting Things Done!

There are many days when it is so hard to get everything done.
Two reasons are Kyle and Jack!
They continue to make a mess just after I've cleaned one.
A saving grace is taking a bath.
They LOVE to take a bath.
So when I have to get ready,
make my bed, put laundry away.
This is where they go--
They truly could be in the the bath tub for hours!

Small things like taking a bath at 1 in the
afternoon mean so much!!

Steven and the ER--

Yesterday was the 1st of day "Fall Break".
I decided to pack a lunch and take the boys to park to play.
We got there at about noon.
They were having so much fun.
We brought a football and played catch for a while.
That's one thing fun about boys.
Bring a BALL anywhere and it's hours of fun!

After that they headed over to the picnic area and
were jumping from table to table....
SLIP!!!! CRY!!!! BLOOD!!!!

Steven smacked his eye on the corner of one of the tables.
Poor thing, he was screaming {BLOODY} murder.
His face was covered in blood.
Luke was about to hyperventilate, he kept saying
"my, twin, my twin..."
Needless to say we spent the next hour or so at the insta care--
The GASH!
It doesn't look that bad here, but man a head wound can BLEED!
Here he is. A bit nervous for the "STINGING" water.
Trying to be so brave--
which he was. They had to give him multiple injections
of the STINGING water. (Numbing medication)
And yes, he did cry. But he laid so still!!!
Getting stitches!!!
The end result!
A total of 5 stitches!!!

And a GRAND total of 8 in his head.
3 in the back and now 5 in the front!

**BAKING**

COMFORT FOOD!!!
There is something to be said about eating something delicious!
Especially when it's homemade!! From YOUR kitchen!

Well here is something you MUST try!
Croissant Bread Pudding!!!

First you make a custard!
Arrange your croissants in a baking dish.
Pour the custard on the croissants and let soak for 10 minutes
Place dish in a larger dish
fill larger dish with water
(this is called a water bath,
and it will help keep a humid oven
and keep the bread pudding moist when eaten)
Cover with tin foil.
and Bake---
Your beautiful Croissant Bread Pudding is Complete!
Enjoy!!!

Here's the Recipe:

  • 3 extra-large whole eggs
  • 8 extra-large egg yolks
  • 5 cups half-and-half
  • 1 1/2 cups sugar
  • 1 vanilla bean scrapped
  • 6 croissants, preferably stale
  • 1 cup raisins
  • (I don't like raisins so they're not in mine)

Preheat the oven to 350 degrees F.

In a medium bowl, whisk together the whole eggs, egg yolks, half-and-half, sugar, and vanilla.

Set the custard mixture aside. Slice the croissants in half horizontally.

In a 10 by 15 by 2 1/2-inch oval (or rectangle)

baking dish, distribute the bottoms of the sliced croissants,

then add the raisins, then the tops of the croissants (brown side up),

being sure the raisins are between the layers of croissants or they will burn while baking.

Pour the custard over the croissants and allow to soak for 10 minutes, pressing down gently.

Place the pan in a larger one filled with 1-inch of hot water.

Cover the larger pan with aluminum foil, tenting the foil so it doesn't touch the pudding.

Cut a few holes in the foil to allow steam to escape.

Bake for 45 minutes. Uncover and bake for 40 to 45 more minutes

or until the pudding puffs up and the custard is set.

Remove from the oven and cool slightly. Serve warm or at room temperature.

Cat's Away the Mice Will Play!

This morning I had to drive car pool!
(I love car pool---but that's another story)

I left everything ready for Dan.
5 plates on the counter full of French Toast.

I guess that wasn't SWEET enough.
Jack decided to also have a Tootsie Pop.
He was very generous too--He got 2, unwrapped them both
gave one to Kyle and kept one for himself.
I ask myself--
Where was your Dad!!!???

Elder Andrew LaPray

Tonight we headed down to Provo.
Andrew got his mission call!
The boys were so excited to see him read it.

Here they are waiting to find out where
Andrew will be serving the Lord for 2 years.

He is just THRILLED!
Andrew will be such a wonderful missionary.
He is also a perfect example to my boys!!
He enters the MTC February 23, 2011.
We'll be writing him!!!

**BAKING**

I LOVE TO BAKE!
I'm sure if you know me,
my kitchen is always at work!!
One reason I love it so much is that
it is a way to be with my boys.
They love helping me.
Each of them takes a turn dumping flour,
sugar, adding the vanilla etc...

When I was a little girl and I would come home from
school there was alway something warm coming out of the oven.
I would sit down on a stool at the counter and
TALK to my mom. It is one of those cherished memories.
I want that with my sons!! Cherished Memories!!

I'm now a baker at heart. And I think I'm pretty good at it.
So I'm going to share with you each week something
I bake with the boys.

This week--
SNICKERDOODLES
The dough!
Covering the cookies with cinnamon and sugar.
The cookies ready for baking! A dozen at a time.
Don't they look delicious!!!!!????
And of course the critics!!!
They seem pretty impressed!!

Here's the recipe!!

Snickerdoodles:
1 cup shortening
1 cup butter
2 cups sugar
4 eggs
5 1/2 cups flour
2 tsp cream of tarter
2 tsp baking soda
1/4 tsp salt

Mix in order, roll into balls (about walnut size)
Roll in cinnamon mixture (2T sugar & 1 tsp cinnamon)
bake at 350 for 10-11 minutes!!!
