3986. CHIPOTLE BACON SLIDERS (GLUTEN & GRAIN FREE)

Serves: 9 small burgers

1 large yellow onion, sliced into thin rounds
2 TBS butter, ghee, or coconut oil
1 pound ground meat
4 strips of precooked bacon
1 tsp unrefined salt
½ tsp chipotle chili powder
½ tsp chili powder
1 tsp cumin powder
1 TBS butter, ghee, or coconut oil for cooking burgers
1 avocado
lime juice
unrefined sea salt

OPTIONAL:
a few dashes of your favorite hot sauce
lettuce for garnish

TO MAKE CARAMELIZED ONIONS: Melt the ghee, butter, or coconut oil on medium heat. Add onion rounds and saute slowly until golden brown. Push the onions around a bit to make sure they cook evenly. You can add a tablespoon of water if they begin to stick to pan. Mine usually take 20-25 minutes.

Mash together avocado, lime, and salt in a small bowl. Add optional hot sauce for some heat. Set aside.

Combine ground meat, chopped bacon, salt, and spices in a medium bowl. Mix to combine. Form into 9 small patties.

Heat 1 TBS of fat of choice in skillet on medium to medium high heat. Cook patties 4-5 minutes on each side, or until cooked the way you like it.

Serve over a bed of fresh lettuce. Top with caramelized onions and avocado.

3973. BACON and CURRANT PORK BURGERS with SPICY ORANGE DRESSING

1 lb ground pork
¼ cup dried currants
8 strips bacon, diced
1 orange, peeled and diced
1 8oz can green chiles
½ 7oz can coconut milk
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon ground mustard
¼ teaspoon paprika
salt and pepper to taste
1 garlic clove, minced
1 tablespoon fat of choice

First, heat up your grill. If you are not using a grill, forget this step.

Now dice up your bacon. Maybe to 1 inch long strips/rectangles and throw them in a deep frying pan over medium-high heat.

While the bacon cooks, add your ground pork, currants, and spices to a bowl and mix together. Once the bacon is done cooking, add the cooled bacon to the mixture and mix all together.

Form into patties, however big you would like, and throw those little suckers on your hot grill. If you are not using a grill and just want to use your frying pan, pour the excess bacon fat into a jar/can to use later and add your pork burgers directly to that hot pan. They will need to cook for about 5-6 minutes/side depending how thick you made them and where you decide to cook them.

While the burgers cook on grill or pan, pull out a smaller saute pan, and add your fat of choice along with your minced garlic clove and heat up under medium-high heat.

Once the garlic smell fills the air, add your coconut milk, oranges, and green chiles to the mixture.

Add a bit of salt and pepper to the mix and stir. Turn the heat down low and let simmer for about 3-4 minutes.

Once the burgers are cooked through, top them off with the spicy orange dressing.

3424. QUESO BLANCO BACON BURGERS with WATERMELON and TOMATO SALSA FRESCA

makes six burgers

1 seeded serrano chile, minced
1 clove garlic, minced
1/2 teaspoon grated lime zest
2 tablespoons lime juice
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 cup diced watermelon
1/2 cup diced, seeded tomato
1/4 cup diced red onion
1/4 cup minced cilantro
6 slices bacon, diced
2 lbs ground chuck
4 oz. queso blanco (or Monterey Jack) cheese, grated
1/4 cup minced cilantro
2 cloves garlic, minced
1-2 minced chipotle chili peppers in adobo sauce
1 1/2 teaspoons salt
1/2 teaspoon black pepper
3 tablespoons vegetable oil, for brushing grill rack
8 oz. queso blanco (or Monterey Jack) cheese, grated
6 bakery hamburger buns, split
6 leaves Bibb or Boston lettuce

Preheat a gas grill to medium-high heat, or prepare a medium-hot fire in a charcoal grill with a cover.
Combine chile, garlic, lime zest, lime juice, sugar, and salt in a medium non-reactive bowl and mix well. Stir in watermelon, tomato, onion, and cilantro. Cover and refrigerate while preparing burgers.

Place bacon in a large, heavy non-stick fire-proof skillet on the grill; cook until crisp. Reserving dripping, use slotted spoon to transfer bacon pieces to paper towels. Mix lightly, handling as little as possible. Shape into 6 patties to fit buns.

Sprinkle cheese on patties during last 3 minutes of grilling. Place buns, cut side down, around outer edges of grill during last 2 minutes of grilling.

To assemble burgers, place lettuce on buns, top with equally divided salsa fresca, followed by patties. Add bun tops and serve.

3352. CHICKEN and BACON KORMA BURGER

makes four burgers

1 lb. dark chicken meat, skinned and cut into chunks
4 slices bacon, cut into chunks
1/2 large onion, cut into rough chunks
3 tablespoons korma paste
1/3 cup dried breadcrumbs

Put onions into food processor and blitz until very finely chopped. Put into a large bowl. Put the chopped up chicken and bacon into the food processor and pulse until they are minces and combined. You want it pretty fine but stop before they become a total paste. Put meat mixture into the bowl with the onions. Add the korma paste and breadcrumbs. Work the mixture together with your hands until it is fully combined and the paste is evenly distributed. Form into four patties. Fry patties in a skillet with a little canola oil for about 5 minutes each side or until cooked through. You could also do this on a Foreman type grill and save yourself those calories. Serve.

3308. BACON and CHEESE CURD BURGER

makes four servings

4 thick bacon slices
1/4 cup packed brown sugar
2 lb. 85% lean ground chuck or 90% lean ground sirloin
3/4 cup cheese curds or string cheese, chopped
salt and ground black pepper
4 good quality hamburger buns
4 1/4 - inch thick slices ripe tomato (optional)
4 thin slices white onion (optional)
4 Iceberg lettuce leaves (optional)

Place bacon slices on the unheated rack of a broiler pan. Sprinkle each slice with brown sugar. Bake in a 450º F oven for 10 minutes or until crisp. When cool enough to handle, chop bacon; set aside.

Divide beef into eight equal portions. Pat beef portions into patties approximately 4 inches in diameter and about 3/4-inch thick.

Equally divide and place the bacon and 3 tablespoons of the cheese curds in the middle of four of the patties, leaving 1/2 inch around the edge of the patty. Top each with the remaining 4 patties. Pinch edges of top and bottom patties together to form one large burger patty. Chill, covered, in the refrigerator for at least 1 hour.

Season burgers with salt and black pepper. For a charcoal grill, place the patties on the well-oiled rack of an uncovered grill directly over medium coals for 10 minutes. Turn with a wide spatula and grill 10 to 12 minutes more, until meat is cooked and an instant-read thermometer inserted into patties registers 160º F. Toast buns, cut side down, on grill during last 1 to 2 minutes of grilling.

To serve, place a cooked burger on bottom half of each bun. If you like, top each with tomato, onion, and lettuce.

3219. PORK BURGERS with BACON MARMALADE

yields four servings

4 slices bacon, chopped
1 large onion, chopped
1 teaspoon hot sauce, plus more to taste
1 teaspoon sugar
1/2 teaspoon red wine vinegar, plus more for drizzling
Kosher salt and freshly ground pepper
1 1/4 pounds ground pork
2 teaspoons extra-virgin olive oil, plus more for drizzling
4 slices Swiss cheese
4 hamburger buns, split and toasted
1 romaine lettuce heart, thinly sliced
2 medium tomatoes (1 sliced, 1 chopped)

Make the bacon marmalade: Cook the bacon in a large nonstick skillet over medium-high heat until almost crisp, 5 minutes. Pour out half of the drippings, add the onion to the skillet and cook, stirring, until the onion browns, 10 more minutes (add a splash of water if the onion sticks). 3104. BLT CHICKEN BURGERS

makes four servings

1 pound ground chicken, preferably a mixture of 1/2 white and 1/2 dark meat
1/2 cup shredded sharp cheddar cheese
1/3 cup grated parmesan cheese
1 teaspoon minced garlic
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup mayonnaise
1/4 cup finely chopped fresh basil
1 tablespoon each fresh lemon juice and finely shredded lemon zest
4 onion kaiser rolls, split
8 strips bacon (about 8 oz.), cooked until crisp
1 large tomato, thinly sliced
4 leaves romaine lettuce

Prepare a charcoal or gas grill for medium heat (350° to 450°; you can hold your hand 5 in. above cooking grate only 5 to 7 seconds).

Meanwhile, in a large bowl, gently mix chicken, cheeses, garlic, salt, and pepper. Form into 4 burgers about 3/4 in. thick, making a slight depression in center of each patty (this helps keep burgers flat as they cook). Put on a plate, cover, and refrigerate until ready to grill.

In a blender, whirl mayonnaise, basil, lemon juice, and lemon zest together and refrigerate until ready to use. With a silicone brush or oiled paper towels, lightly oil cooking grate.

Grill burgers, covered, turning once, until browned and no longer pink inside (cut to test), 8 to 10 minutes total. Transfer burgers to a clean plate and place buns, cut sides down, on grill until lightly browned, 30 seconds.

Spread toasted sides of buns with basil mayonnaise. Set a chicken patty on each bun bottom and top each with 2 strips bacon, a tomato slice, and a lettuce leaf. Cover with bun top.

2704. DOUBLE CHEESE, AVOCADO and BACON SLIDERS

serves eight

4 strips bacon
1 lb. lean ground beef
1 tablespoon soy sauce
1/2 teaspoon fresh ground pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon marjoram
8 mini hamburger buns or small Hawaiian-style sweet rolls, split and toasted if desired
2 cups baby arugula
2 oz. cheddar cheese, shredded
1 ripe, fresh avocado, seeded and peeled
2 oz. smoked Gouda cheese, sliced to fit buns

Cut bacon strips in half crosswise and cook until crisp. Place cooked bacon on paper towels; reserve. Gently mix ground beef with soy sauce, pepper, onion powder, garlic powder and marjoram. Being careful not to compact the meat, gently form into thin burger patties that are slightly wider than the buns. Grill or pan fry patties over medium-high heat, about 3 to 4 minutes per side, or until cooked through. Meanwhile, slice each avocado half crosswise to make 2 small slices per slider; reserve. Assemble the sliders: top the bottom half of each mini bun with the arugula and shredded cheddar cheese. Place burger patties on top of the shredded cheese; top each with bacon, Gouda cheese, 2 slices of avocado and the top bun.

2432. BLT BURGERS with HONEY TREACLE-GLAZED BACON, GRILLED LETTUCE and SMOKY TOMATO MAYONNAISE

For the honey treacle-glazed bacon:
18 slices thick cut applewood smoked bacon, divided
2 1/2 tablespoons honey
2 teaspoons treacle
2 teaspoons sherry vinegar
pinch ground cayenne

For the grilled lettuce:
4 leaves radicchio
2 tablespoons extra-virgin olive oil
1/2 tablespoon sherry vinegar
1/2 tablespoon Dijon mustard

For the smoky tomato mayo:
1 large ripe tomato
1/2 teaspoon smoked paprika
1 clove garlic
180ml mayonnaise
Salt and freshly ground black pepper

For the burgers:
900 grams minced steak
1/4 teaspoon finely chopped fresh tarragon leaves
2 teaspoons salt
1/8 teaspoon freshly ground black pepper
Vegetable oil, for griddle pan
175 grams Comte or Gruyere, grated
6 hamburger buns, split

Preheat a non-stick frying pan over a medium high heat.

Roughly chop six of the bacon slices, and add to the pan. Cook, stirring occasionally, until the bacon just barely begins to turn crispy, about for 3 to 4 minutes. Add the cooked bacon to a food processor and process for 4 to 5 seconds. Set aside for later use in the burgers.

For the honey treacle-glazed bacon: In a small mixing bowl, combine the honey, treacle, vinegar and cayenne pepper, and mix until well combined. Brush the remaining 12 bacon slices on both sides with the honey mixture.

Heat a large fireproof non-stick pan on the griddle. Add half the bacon and cook over a medium high heat until crispy, about 5 minutes, flipping once. Drain on paper towels. Repeat with the remaining bacon.

For the griddled lettuce: Soak the radicchio leaves, for about 10 minutes, in an ice bath to lessen the amount of bitterness. Remove the leaves from the ice bath and pat dry with paper towels. Brush the leaves with 1 tbsp oil.

Put on the griddle and cook briefly on each side. Transfer to a cutting board and cut into 2.5cm-wide strips.

In a large mixing bowl, whisk together the remaining 1 tbsp of oil, the sherry vinegar and Dijon mustard. Add the radicchio and toss to coat.

For the smoky tomato mayo: Put the tomato on the griddle and cook for 6 to 8 minutes, turning occasionally, until most of the skin has blackened. Transfer to a small bowl and cover with cling film. After 10 minutes, squeeze the tomato into a strainer to remove the seeds and most of the skin (you can leave a little bit of the burnt skin). Discard the seeds and skin.

In the bowl of a food processor, combine the tomato, smoked paprika, garlic and mayonnaise and puree. Season, to taste, with salt and pepper.

For the burgers: Combine the beef, reserved bacon (that was chopped in the food processor), tarragon, salt and pepper in a large bowl. Mix well, handling the meat as little as possible to avoid compacting. Divide the mixture into six equal portions and form into burgers to fit the size of the buns.

Brush the griddle pan with vegetable oil. Arrange the burgers in the pan and cook, turning once, just until done, about 4 minutes on each side for medium-rare. During the last few minutes of cooking, top with equal amounts of cheese and put the buns, cut side down, on the outer edges of the griddle to toast lightly.

Spread a generous amount of the smoky tomato mayo on the cut side of the buns. Top the bottoms with two slices of honey treacle-glazed bacon, a cheese-topped burger and equal amounts of grilled lettuce. Cover with the bun tops and serve.
