I understand how useful the Sidebar app feature was for quick access to your favorite apps and sites, and I can see why this change would be frustrating.
Based on the current Microsoft support article, the Sidebar app list is being retired gradually in Microsoft Edge, starting with Microsoft account users. At this time, new apps can no longer be added to the Sidebar app list, and apps that are already pinned there will be removed in a future update. The side pane and Copilot are not affected by this change. There is no confirmed final retirement date yet.

The sidebar itself can still be enabled, but the old “sidebar app list” experience shown in the screenshot is being retired and can’t be brought back once removed. New sidebar apps can no longer be added through that list.
Current options depend on whether this is a managed (organization) device or a personal one:
jbleckejnaboogigodiafflhkajdmpcl.jbleckejnaboogigodiafflhkajdmpcl so only Search is allowed.For unmanaged/personal installations, the retirement notice means the legacy app list UI cannot be restored; only the new sidebar behavior and whatever controls Microsoft exposes in Edge settings will be available.
