Meiner Meinung nach darf Reissalat eigentlich auf keiner Party fehlen, vor allem nicht diese Variante. Dies hier ist die Vegane Variante des Reissalats, bei der die Mayo un der Schinken ausgetauscht wurden. Sie ist gehaltvoll, aber auch saumäßig lecker.

Zutaten:

  • 150g Reis
  • 150g vegane Mayonaise
  • 1,5 EL Sojasoße
  • 1 EL Zucker
  • 1 Zwiebel
  • Salz
  • 1-2 Paprikaschoten
  • 1 Dose Mandarinen
  • 1/2 EL Räucherpaprika

Für die Pilze:

  • 200g Pilze (Champignons)
  • Etwas Öl
  • Etwas Sojasoße
  • Etwas Räucherpaprika
  • Gewürze wie Salz, Pfeffer etc. nach belieben

Zubereitung

Den Reis kochen und etwas abkühlen lassen.

Während der Reis kocht, die Pilze vorbereiten: Die Pilze klein schneiden, am besten in kleine Streifen oder Würfel. Eine Marinade aus etwas Öl, Sojasoße, der Räucherpaprika und den Gewürzen erstellen. Die Pilze mit der Marinade vermengen und ein ein paar Minuten einziehen lassen. Dann in einer Pfanne die Pilze anbraten.

Die Paprika auch in kleine Würfel schneiden, die Mandarinen am besten auch ein wenig zerkleinern. Dann alle Zutaten vermischen. Den Salat am besten etwas ziehen lassen, also am besten einen halben bis ganzen Tag vorher zubereiten.

Dann den Reissalat genießen.

In my opinion, a rice salad really should be at every party, especially this version. This is the vegan version of the rice salad, in which the mayo and ham were replaced. It is filling, but also absolutely delicious.

Ingredients:

  • 150 g rice
  • 150 g vegan mayonnaise
  • 1.5 tbsp soy sauce
  • 1 tbsp sugar
  • 1 onion
  • salt
  • 1-2 bell peppers
  • 1 can of mandarins
  • 1/2 tbsp smoked paprika

For the mushrooms:

  • 200 g mushrooms (champignons)
  • a little oil
  • a little soy sauce
  • a little smoked paprika
  • spices such as salt, pepper, etc. to taste

Preparation

Cook the rice and let it cool slightly.

While the rice is cooking, prepare the mushrooms: Cut the mushrooms into small pieces, preferably into thin strips or cubes. Mix a marinade from a little oil, soy sauce, smoked paprika, and the spices. Toss the mushrooms with the marinade and let them sit for a few minutes. Then fry the mushrooms in a pan.

Dice the peppers as well, and preferably chop the mandarins a little as well. Then mix all the ingredients together. It is best to let the salad rest for a while, so it is ideal to prepare it half a day to a full day in advance.

Then enjoy the rice salad.

Maultaschen sind ein wahres schwäbisches Kulturgut und aus der schwäbischen Küche nicht wegzudenken. Das nachfolgende Gericht beschreibt aber nicht die klassischen schwäbischen Maultaschen, sondern die fränkische Variante, die mir meine (fränkische) Mutter beigebracht hat. Typisch dafür ist auch das Fehlen von genauen Zutatenmengen. Hier muss man mit etwas gefühl arbeiten.

Zutaten:

  • Hackfleisch
  • Tomatenmark
  • Zwiebeln
  • Salz, Pfeffer, Paprikapulver, Petersilie
  • evtl. Milch/Sahne
  • Brötchen
  • Butter
  • Nudelteig

Zubereitung

Hackfleisch anbraten, würzen mit Tomatenmark, Zwiebeln, Salz, Pfeffer, Paprikapulver, Petersilie, evtl. Milch/Sahne. Die Konsistenz muss dabei fest bleiben! Das ganze kalt werden lassen.

Brötchen klein schneiden und in Butter anrösten. Dann in das Fleisch mengen.

Nudelteig dünn ausrollen und in Quadrate schneiden. Füllung rein und über Eck kleben.

In Wasser ca. 20 Minuten ziehen lassen.

Die fränkischen Maultaschen genießen!

Maultaschen are a true cultural treasure of Swabia and are indispensable in Swabian cuisine. However, the following recipe is not for the classic Swabian Maultaschen but the Franconian version that my (Franconian) mother taught me. A typical feature is the lack of precise ingredient measurements, so you’ll have to work with a bit of intuition.

Ingredients:

  • Ground meat
  • Tomato paste
  • Onions
  • Salt, pepper, paprika powder, parsley
  • Optional: milk/cream
  • Bread rolls
  • Butter
  • Pasta dough

Preparation

Brown the ground meat and season with tomato paste, onions, salt, pepper, paprika powder, parsley, and optionally some milk or cream. The consistency must remain firm!
Let the mixture cool down.

Cut the bread rolls into small pieces and roast them in butter. Then mix them into the meat.

Roll out the pasta dough thinly and cut it into squares. Add the filling and fold the squares diagonally, sealing the edges.

Let them simmer in water for about 20 minutes.
