Converting *.flac to *.mp3

I would like to know if I can influence the quality of the generated mp3 file.

When I take a *.flac file and convert it to a *.mp3 file, I only get an *.mp3 file with a bit rate of 128 kbps. I find that very low.
Can I influence that?
