Soon after bottling half of it -- and racking the other half on top of apricot puree -- I noticed a marked ropiness in the bottles. I emailed Tim, the co-owner of Sante Adairius, to ask about how long it takes to clean up, and he said they leave their Saison Bernice in bottles for 3 months. I noticed you bottle conditioned yours for 2 months. Was there any pronounced ropiness or pedio "sickness" at that point? Usually 24 hours with the beans is enough for the potency in aroma and flavor that I'm looking for.
